So, I remember there being a food forum here, but I didn't see it this time. Sorry if I overlooked it. I just made a broccoli casserole off the top of my head using what I had around the house, and it is the best broccoli casserole I've ever had. Ever. So, here's basically the recipe for those who like broccoli casserole and also so I can remember it. -About 10 ounces of broccoli, fresh or thawed, chopped up (though some large pieces are fine) -About 2 cups of rice, cooked (that's 1 cup dry, probably about 2 cups cooked) -One can of Campbell's Broccoli Cheese Soup (actually, most cream soups would suffice, but this was what I had. each different kind would modify the flavor slightly) -About half of a small sized block of extra sharp cheddar, grated finely (or whatever kind you prefer) -Enough extra cheese besides that to go on top after it's been placed in the baking pan -about 2 1/2 tablespoons of melted butter -One egg, beaten And now the hard part: put all of that in a mixing bowl and mix it up. I put it in this order: broccoli, soup, rice, cheese, butter, egg. I don't know, but I think you could change that around some with no problems. After it's all mixed up, take a greased up casserole pan, baking pan, or whatever, and spread it into that. Cover with extra cheese, bake at around 350 for about 20-25 minutes, though my oven is quite virile, so you may need to add some time. Anyway, that's it. I ate it with a leftover hamburger steak, and have plenty leftover for later. I think it's great, but if you don't like broccoli you can ignore my praise. Also, if you don't like cheese, but you must be some kind of crazy to not like cheese. |
